F&B Cost Controller

ROLE FUNCTIONS
- Support the F&B Cost Control Manager in monitoring daily food and beverage costs, ensuring accurate and timely data entry across all outlets.
- Assist in reviewing purchase requests, verifying specifications, quantities, and pricing before submission to procurement.
- Track and reconcile receiving reports, transfer slips, and outlet consumption records to maintain accurate inventory figures.
- Conduct routine spot checks in storerooms, kitchens, and bars to verify stock levels, usage patterns, and adherence to control procedures.
- Help analyze variances between actual costs and budgeted or theoretical costs, preparing initial summaries or findings for management review.
- Maintain and update recipe costing sheets and POS item mappings, ensuring pricing accuracy and alignment with current cost structures.
- Monitor wastage logs, breakage reports, and promotional activities, highlighting irregularities or trends that may require managerial attention.
- Assist in preparing weekly and monthly cost reports, dashboards, or key metrics for the Cost Control Manager and senior leadership.
- Coordinate with storekeepers, outlet managers, and the finance team to resolve discrepancies in invoices, inventory counts, or documentation.
- Support periodic stocktakes by organizing count sheets, participating in counts, and performing basic reconciliations afterward.
- Ensure compliance with company cost control policies and procedures, helping reinforce correct processes across F&B departments.
- Contribute to process improvement initiatives by identifying small inefficiencies and suggesting practical adjustments in day-to-day controls.
Requirements
- Relevant experience in procurement/purchasing or cost control within the hospitality industry.
- Proficient in MS Office and other relevant software.(Soft 1)
- Good knowledge of the English language.
