Role Functions
- Oversee the entire stewarding department, ensuring all kitchens, service areas, and back-of-house spaces are maintained at the highest standards of cleanliness and operational readiness.
- Supervise dishwashing, pot washing, and equipment cleaning activities, allocating duties and scheduling staff to support smooth F&B operations.
- Implement and enforce strict hygiene, sanitation, and health and safety procedures in compliance with local regulations, HACCP guidelines, and hotel standards.
- Conduct regular inspections of kitchens and stewarding areas, identifying hazards or non-compliance issues and taking corrective action promptly.
- Manage inventory and control of stewarding supplies including chemicals, cleaning tools, crockery, cutlery, glassware, and equipment.
- Coordinate preventive maintenance and repair needs for stewarding equipment, working closely with engineering to minimize downtime.
- Train and coach stewarding staff on cleaning techniques, equipment handling, chemical usage, waste management, and safety protocols such as PPE and emergency procedures.
- Ensure proper waste segregation, recycling initiatives, and environmentally responsible practices are consistently followed.
- Work closely with the Executive Chef, F&B leadership, and banquet operations to plan for major events, deep cleaning schedules, and operational requirements.
- Develop and maintain standard operating procedures for stewarding tasks, safety practices, and hygiene standards.
- Monitor chemical consumption, ensuring correct dilution, safe storage, and compliance with MSDS guidelines.
- Prepare departmental reports including breakage, chemical usage, staffing, and compliance reviews for senior management.
- Support budget control through efficient manpower planning, responsible use of chemicals, and minimizing breakage or equipment loss.
Requirements
- Proven experience in stewarding operations within a luxury hotel or high-volume hospitality environment, with at least 3–5 years in a supervisory or chief steward role.
- Strong knowledge of HACCP, food safety regulations, occupational health and safety requirements, and sanitation best practices.
- Demonstrated leadership skills with the ability to train, motivate, and discipline a diverse team.
- Solid understanding of kitchen workflows, banquet operations, and back-of-house logistics.
- Ability to manage inventory and oversee the handling of chemicals, cleaning tools, and foodservice equipment.
- Strong organizational skills with the ability to prioritize tasks, manage high-pressure situations, and respond quickly to operational needs.
- Good communication skills, both verbal and written, with the ability to collaborate effectively with culinary, F&B, and engineering teams.
